Erica Allen is a self taught cook and co-founder of Darke Pines, a whole animal butcher shop in Jersey City, NJ. Erica's approach to food is seasonal and simple, a reflection of growing up in Selma, Alabama. She strives to highlight local fruits, vegetables and quality cuts from small farmers. On her table, you'll find classic southern dishes influenced by Mediterranean culinary traditions. Cornbread, served alongside Greek meatballs. Beans and collards drizzled with mint oil. Pies? Well, of course.
